RED PESTO with SUN-DRIED TOMATOES and FRESH BASIL
A pesto whose distinct Mediterranean flavour of sun-dried tomatoes is complemented by the Genoese pesto ingredients, especially the PDO Genoese Basil. With a slightly spicy aftertaste, this is a traditional recipe of Grandma Maie’ who used to make it at Christmas, when there wasn’t enough basil to make the usual pesto. She would add summer sun-dried tomatoes to the small amount of basil that had been preserved in oil and salt.
